Gingerbread Collins

Glass: Highball
Recipe:
- In a shaker, half fill a with ice add the gin, lemon juice, syrup (NOT GINGER SYRUP) and a few drops of bitters.
- Shake vigoursly!
- Strain into glass and top with a little Soda water

History
The only place I have ever seen make this cocktail is Fallon & Byrne in Dublin - the mixologist there is fantastic and if you are ever in Dublin, I would highly recommend a visit to the upstairs bar - if only to try their Jalepeno Margarita!
