Lime Fizz

A classic fizz. One of Iron Chef Michael Symons favorite drinks. This drink is essentially an alcoholic meringue (as in lemon meringue pie) - don't be afraid of the egg or you will seriously miss out on one of the best and easiest drinks to make ever.

Ingredients [ oz | cl ][ My Bar ]
1 12 oz White Rum[ Add ]
34 oz Lime Juice[ Add ]
34 oz Simple Syrup[ Add ]
1 Egg White[ Add ]
Method: Prepare in a shaker
Glass: Collins
Recipe:
  1. Add all ingredients in a shaker.
  2. Add ice to shaker until about 2/3 full.
  3. Shake ingredients for about 4 minutes - seriously the longer you shake it the better.
  4. After shaking for that long you should have a frothy mousse-like drink.
  5. Serve in a chilled collins glass and garnish with a lime slice.

History

Eggs rarely get used in modern drinks, which is sad to me because they add great texture and dimension to drinks. About 6 months ago I started experimenting with classic 'fizzes' and this was my favorite.

Nice one! To rate it, I'd have to try it a couple more times, though. If you actually bother to shake it for about 4 minutes, the froth created by the egg white will be so stiff you can scoop it out with a spoon.
