Long Island Iced Phi Phi

1. PREPARING THE GALANGAL & LEMONGRASS ICE TEA:
2. Steep 1 stick of finely chopped fresh lemongrass (6 inches) and 1 cube of ginger (.5cm x .5cm) in 1000ml of boiling water for 20-30 minutes.
3. Strain the tea and let it cool overnight or add ice and freeze for 5 minutes.
4. Alternatively, you can use Vodka infused with Lemongrass & Ginger in similar proportion.
5. PREPARING THE COCKTAIL:
6. Pour 45ml Blue Curacao, 30ml Vodka, the juice of a quarter of lemon, 200ml of Kiwifruit Juice and 250ml of Galangal/Lemongrass Tea into a cocktail shaker.
7. Shake it like Homer Simpson would shake a baby and pour into a big glass over ice.
8. Garnish with pieces of lemongrass and lemon (to evoke the beach).

Histoire

Shortly after a great trip to Thailand, I was missing the wonderful food, weather and drinks over there.

I threw a few ingredients together, added whatever alcohol was in the cupboard, had some kiwi fruit juice in the fridge and ended up with a cocktail that tasted like Thailand and looked exactly like the crystal waters of Ko Phi Phi Ley.

Curacao could be substituted for Absinth or Agwa if you're in the mood for a full moon party.
